I promise, soon I’ll be posting more than (mostly) recipes, but y’all know I love PB2 (see here and here) so I had to share this little healthy peanut butter banana bread recipe. We happened to have a bunch of overripe bananas, so I set out to figure out a nice, fluffy banana bread that had a little peanut butter flavor to it, too. It’s definitely not the typical dense, moist banana bread, but S and I really enjoyed it. Neither the banana nor the peanut butter flavor are overpowering, and the bread itself is lighter and less cake-like than most banana bread.
As with most of my recipes, this healthy peanut butter banana bread also goes nicely with a cup of coffee for breakfast or a quick snack.

Healthy Peanut Butter Banana Bread Recipe
Ingredients
- 2.5 cups Flour
- 1/2 tsp Ground Cinnamon
- 3.5 tsp Baking Powder
- 1.2 tsp Salt
- 3 Large Overripe Bananas mashed
- 1/4 cup packed Brown Sugar
- 1/4 cup Sugar
- 1/4 Cup Greek Yogurt
- 1 Tbsp. Canola Oil
- 2 Eggs
- 1/2 cup PB2
- 1/2 cup Water
Instructions
- Preheat oven to 350.
- Combine flour, cinnamon, baking powder and salt, mixing thoroughly. In a separate bowl, mash the banana, then add brown sugar, sugar, yogurt, and eggs, mixing until well combined.
- Add the wet mix to the dry and fold until mixed well, and transfer into a loaf pan lined with parchment paper.
- Mix together PB2 and water, then pour over batter & swirl it into the bread batter. (Or just fold the mixture into the batter before you transfer it to the loaf pan.)
- Bake the healthy peanut butter banana bread for 55-65 minutes, until a toothpick inserted comes out clean.
