Do you ever find yourself in need of a quick and (at least a little) wholesome snack?
I always find myself searching for a little something when I get home from the gym–I never want to have a whole protein bar or anything too heavy.
Enter granola bites.
They’re a perfect snack to grab when you’re feeling peckish. Naturally, I paired chocolate and PB2 (the best!) to make a sweet little treat, great post-workout or anytime with a hot cup of coffee. Plus, these granola bites are super easy and you probably have almost all of the ingredients in your pantry already! Also, I stirred a few sprinkles into mine, but that’s completely unnecessary…just cute.

Chocolate PB2 Granola Bites Recipe
Ingredients
- 1-2 Tbsp. Coconut Oil
- 1/4 cup Honey
- 1/3-1/2 cup PB2 prepared
- 2-2.25 cups Old Fashioned Oats
- 1/4 cup Chocolate Chips chopped or mini
Instructions
- Over medium heat, mix together coconut oil, PB2, and honey. Remove from heat and stir in vanilla extract, then pour over oats. Mix until well coated and refrigerate for 5-7 minutes. Stir in chopped chocolate chips and either scoop into your hand using a medium cookie scoop and press into a ball shape, or press into a square pan lined with parchment paper and let set. Enjoy!
