Easter weekend is here, and I don’t know about you but I always try to get one big bag of mini Cadbury Eggs during the Easter season. I snagged a HUGE bag, so since I’m fully stocked on them, I knew I had to make some Easter Egg Cookies.
This makes a pretty big batch of cookies, but they’re such a delicious treat. They’ve even been approved by my grandmother!
Easy Easter Egg Cookies
These easter egg cookies taste a little like sugar cookies…but with a little crunch from the Cadbury eggs. Oh, and chocolate. Chocolate makes everything better, right? They also go really well with a good cup of coffee. (If I say that about every dessert that I ever share, I’m sorry. I just really like coffee.) I also may or may not have had one faith my coffee this morning.

Easy Easter Egg Cookies
Ingredients
- 3 cups Flour
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 1 cup Butter softened
- 3/4 cup Sugar
- 3/4 cup Packed Brown Sugar
- 2 Eggs
- 2 tsp Vanilla
- 1-1.5 cup Mini Cadbury Eggs
Instructions
- Preheat the oven to 350.
- Stir together flour, baking, soda, and salt.
- In a separate bowl, mix the butter, sugar, and brown sugar until well blended. (I use a mixer for this and the next few steps.)
- Add the vanilla and then add the eggs one at a time, mixing well after each one.
- Add the dry ingredients a little at a time. Mix until combined.
- Add mini Cadbury Egss and mix until just distributed into the dough.
- Scoop onto a cookie sheet (I use a small cookie scoop) and lightly flatten each cookie.
- Top with one or two extra eggs if you’d like.
- Bake for 8-10 minutes, then cool on a cooling rack and enjoy!
