I’ve always loved a good little tea cake. I think that these are a southern thing, but hear me out: they’re just a little bit sweet and oh-so-addicting. And yes, they’re pretty much just sugar cookies, but tea cakes sound like more fun, right?
The Sweetest Season Cookie Exchange
I’m participating in The Sweetest Season Cookie Exchange again this year, and there are SO many good recipes! I missed it last year, but the two years ago I made these Sugar Cookie Christmas Trees and three years ago, I made these cute little Peppermint Madeleines.
So obviously peppermint is one of my absolute favorite flavors during the holidays. Peppermint ice cream? Yes, please. Peppermint coffee? Absolutely, hand it over. Basically if I’m baking something, I might try to add some peppermint to it. You get the idea. So this year, I thought I’d put a little holiday twist on classic southern tea cakes.
Don’t worry, there’s not an overwhelming amount of peppermint flavor in these. It’s just the lightest little taste of sweet peppermint in cookie form. They’re easy to make, you can make these southern tea cakes ahead of time and of course, they’d be perfect to leave out for Santa on Christmas Eve!
Slice & Bake Peppermint Southern Tea Cakes (Sugar Cookies)
Ingredients
- 1/2 Cup Butter Softened
- 3/4 Cup Sugar + 1 additional Tbsp.
- 2 Eggs Beaten
- 2 1/2 - 2 3/4 Cups All-Purpose Flour Sifted
- 2 Teaspoons Baking Powder
- 1 Teaspon Vanilla Extract
- 1 Teaspoon Peppermint Extract
- Red & Green Sugar Optional
Instructions
- Cream butter & sugar in a large mixing bowl.
- Add the eggs, vanilla, peppermint, flour, and baking powder.
- Mix until a dough forms (you may need to scrape down the edges to be sure everything gets mixed well.)
- Separate the dough into two halves, rolling each one into a cylinder.
- *Optional: Spread red & green sugar onto wax paper or parchment paper and roll each cylinder until evenly coated.
- Wrap each cylinder loosely in plastic wrap and stick in the the fridge.
- When you’re ready to bake, preheat the over to 375. Slice the cookie dough in your desired thickness. The thinner you slice them, the more crisp the cookie will bake.
- Bake them for 8-10 minutes on a cookie sheet lined with parchment or a silpat.
- Enjoy! (These are really good with hot chocolate.)
