Who doesn’t love an easy dessert? With Valentine’s Day just around the corner, an easy Greek yogurt cheesecake drizzled in dark chocolate is the perfect treat to whip up for your weekend. My husband is a big fan of cheesecake, but it’s always a little bit too rich for me. This lightened-up version is the perfect amount of sweet (and my cheesecake-loving husband is a fan, too).
My Greek yogurt cheesecake can easily be customized to suit your taste, I stuck with using vanilla Greek yogurt, but your could make it with strawberry if that’s your favorite flavor. I’m tempted to try it with a coffee-flavored yogurt, leaving the strawberries off, of course. Whatever your taste, make sure you drizzle it with dark chocolate and enjoy it with a cup of coffee.

- 8 oz Neufchatel Cheese softened
- 2- 5 oz Vanilla Greek Yogurt
- 20-25 Oreos
- 4 Tbsp. Unsalted Butter melted
- Optional: Dark Chocolate Syrup, whipped cream

- Finely crush the oreos and stir in the melted butter.
- Press this mixture into the bottom of your pie dish and bake at 350 for 8-10 minutes.
- Mix together Neufchatel cheese & Greek yogurt until smooth.
- Once the crust has completely cooled, spread the Neufchatel cheese & Greek yogurt mixture evenly in the dish.
- Top with strawberries, or other fresh berries. Refrigerate until time to serve.
- Optional: Top each slice with a drizzle of dark chocolate syrup and a dollop of whipped cream.
To make it even lighter, omit the crust and make it in a rectangular pan, topping scoops of it with fruit, toasted almonds, and a little drizzle of dark chocolate.
