I’m sure all newlyweds go through he experience of…not really paying attention to what you’re eating. Everything is fun and different, there are so many new restaurants to try (if you move, like I did) and the list goes on. That being said, recently I’ve been working on getting back on track and this is one of my new favorite lunches. It’s so simple, but really fresh and filling–just pick out your favorite fresh vegetables, add some ground turkey and warm sliced sweet potato, and top with a dollop of greek yogurt.
It’s the perfect time to make big, colorful salads. The farmer’s market has opened for the season, so you can find lots of beautiful fresh produce to pile onto your plate–that’s one of my favorite ways to spend a Saturday morning. Just recently I learned that I can pick up a pound of ground turkey at Trader Joe’s for a couple dollars less than the “normal” grocery store, so I stopped in and picked up a couple today. For this salad, I seasoned my turkey with a little garlic powder, cayenne pepper, salt + pepper, and cajun seasoning for a little kick. I’m definitely going to have to recreate this for lunch again ASAP–I’ll have to head to the mid-week market on Wednesday and pick up a big ol’ basket of fresh veggies. I’m a fall & winter person, but this year I’m looking forward to the weather warming up and stocking up on all the gorgeous fruits and veggies that are only in season when it’s warm.
