Way back in January, I posted these peanut butter & chocolate energy bites on my Instagram stories. I got a lot of requests for the recipe, so I’m excited to (finally) be sharing this easy little treat with you! You can also watch my how-to video on my IGTV (click HERE to check it out!)
Honestly, we try to keep a batch of these in the fridge most of the time. They’re a great sweet treat and a filling, quick snack when you need a little boost of energy. You can make them smaller if you’d like to eat them a few at a time. I love this size because one of them is a perfect little snack for me! In the recipe, I use cocoa nibs for my chocolate fix. You can easily replace the cocoa nibs with mini chocolate chips if you want them a little sweeter–but I’m all for the healthier addition on cocoa nibs! Plus, I feel like you get enough sweetness from the addition of the honey.

Peanut Butter & Chocolate Energy Bites
Ingredients
- 1 Cup Rolled Oats
- 1 Tbsp. Chia Seeds
- 1/2 Cup Peanut Butter
- 1/4 Cup Honey
- 1/3 Cup Cocoa Nibs
Instructions
- Mix together rolled oats, chia seeds, and cocoa nibs in a medium sized mixing bowl. Stir to combine.
- Add peanut butter and honey. Stir until evenly mixed. (If the mixture seems too sticky, add more rolled oats.)
- Roll mixture into 1-inch balls and place on a lined baking sheet. (I use a cookie scoop for even sizing.)
- Refrigerate 15-20 minutes, until set. Transfer to an airtight container and store in the refrigerator.
