The warm weather seems to be sticking around now, and it has me craving all of the fruit-filled smoothie bowls. If you follow me on Instagram, I’ve promised to share my favorite pitaya bowl recipe. I just haven’t done it yet. Well, I finally got some photos and I’m doing it!
I’ve made a few different versions of pitaya bowls, like this tropical cherry version, but this one? This one is my absolute favorite. If you see me making a pitaya bowl, it’s probably this one. It’s sweet and slightly tart. It pairs perfectly with my favorite granola and a little bit of almond butter.
Now, when it comes to toppings you can really use anything. I like to use a couple of kinds of fresh fruit if I have it, granola, almond butter, and sometimes chia seeds. For this one, my favorite toppings are strawberries, kiwi, and granola. Some days I’ll top it with just granola and almond butter, it just depends on what I have in the fridge that day. My Favorite Pitaya Bowl Recipe
Ingredients
- 3/4 cup Unsweetened Almond Milk
- 1/4 cup Plain Greek Yogurt any type of yogurt will work
- 1 scoop Collagen Peptides optional
- 1/2 cup Frozen Pitaya (Dragonfruit)
- 3/4 cup Frozen Pineapple Chunks
- 3/4 cup Frozen Mango Chunks
Instructions
- Add all ingredients to blender and blend until it gets to the desired consistency for your smoothie bowl.
- Top with your favorite fresh fruit, granola, almond butter, etc. (I topped this one with strawberries, kiwi, almond sesame granola, and vanilla almond butter.)
- Enjoy!
