Low Carb Shrimp & Grits with Goat Cheese
Low Carb “Grits”
  1. Prepare the mashed cauliflower according to package directions.
  2. Stir riced cauliflower into the mash, cooking until heated through.
  3. Once the cauliflower is cooked, stir in the garlic powder, cajun seasoning, goat cheese, salt, & pepper.
Roasted Shrimp
  1. Preheat oven to 400 degrees.
  2. If frozen, thaw out shrimp. Toss shrimp in a little avocado oil and your favorite seasonings. (I like to use lemon juice, minced garlic, salt, pepper, and a little worcestershire sauce.)
  3. Lay the shrimp out in a single layer on a lined baking sheet and roast in the over for 5-7 minutes, or until the shrimp is cooked.
Recipe Notes

For me, one serving is about one cup of “grits” and 2-3 oz. of shrimp on top.
