Peanut Butter & Chocolate Energy Bites
Mix together rolled oats, chia seeds, and cocoa nibs in a medium sized mixing bowl. Stir to combine.
Add peanut butter and honey. Stir until evenly mixed. (If the mixture seems too sticky, add more rolled oats.)
Roll mixture into 1-inch balls and place on a lined baking sheet. (I use a cookie scoop for even sizing.)
Refrigerate 15-20 minutes, until set. Transfer to an airtight container and store in the refrigerator.
