Instructions
  1. Mix together rolled oats, chia seeds, and cocoa nibs in a medium sized mixing bowl. Stir to combine.
  2. Add peanut butter and honey. Stir until evenly mixed. (If the mixture seems too sticky, add more rolled oats.)
  3. Roll mixture into 1-inch balls and place on a lined baking sheet. (I use a cookie scoop for even sizing.)
  4. Refrigerate 15-20 minutes, until set. Transfer to an airtight container and store in the refrigerator.
