On our way back from Mississippi last weekend, Stephen and I stopped off in Birmingham to grab brunch. I ordered a brunch flatbread, but he got an order of Loaded Breakfast Fries. I KNOW. And they were so, so good. I knew I was going to have to make my own version of those loaded fries. The fries at the restaurant were smothered in cheese & sausage gravy, with bacon and a fried egg on top. Since that’s not how we normally eat, I wanted to create a slightly lighter version.
So, instead of regular potatoes, I used sweet potatoes and baked my “fries” instead of frying them. I left off the gravy, and sprinkled mine with a little cheese, turkey sausage, and avocado, topped off with a over-medium fried egg. So, still not your healthiest breakfast, but still a good bit lighter than the restaurant version.
