Breakfast Sweet Potato Fries

Instructions
  1. Peel and slice your sweet potato into fries. (I prefer thinner fries for this dish.)
  2. Spray the sweet potatoes with a little canola oil and toss in salt & pepper.
  3. Spread the potatoes in a single layer on a baking sheet & cook for 20-25 minutes on 450. Cook them a little longer if you’re a fan of crispy sweet potatoes.
  4. Place the fries in a bowl or mini cast iron skillet, and sprinkle with as much cheese as you’d like.
  5. Next add hot turkey sausage crumbles & avocado chunks.
  6. Top it off with an egg cooked your favorite way.
