With Valentine’s day coming up on Friday, what better time to whip up something Red Velvet? These red velvet madelines are a perfect little treat to enjoy with a hot cup of coffee. Is every sweet I post perfect with a cup of coffee? Maybe. I really like coffee.
Anyway, back to these Red Velvet Madeleines, they’re soft and cake-like and they went pretty quickly in our house. These would make a lovely little Valentine’s day treat, tied up in festive cellophane bags or pretty little boxes.
We’ve never been a big Valentine’s Day couple, but it’s always fun to get dressed up and have a nice meal together. We’ll be doing just that this weekend. What are your Valentine’s (or Galentine’s) Day plans?

Red Velvet Madeleines
Ingredients
- 3/4 cup Sugar
- 3 Eggs
- 2 Egg Yolks
- 1 tsp Vanilla
- 3/4 cup Butter melted
- 2 Tbsp. Red Food Coloring liquid
- 1 1/4 cups Flour
- 2 Tbsp. Unsweetened Cocoa
- 1/2 tsp. Baking Powder
- 1/8 tsp. Salt
- White Candy Melts or White Chocolate Almond Bark optional
Instructions
- Preheat the oven to 400°. Beat sugar, eggs, egg yolks, and vanilla at medium-high speed for 5 minutes, until it thickens and lightens in color. Add butter and food coloring, beating until blended.
- Stir together flour, cocoa, baking powder, and salt, then fold this into the egg mixture. Spoon batter into madeline pans, filling about 3/4 full. (I used a small cookie scoop and it filled them perfecly.)
- Bake for 8 minutes (I used a dark, nonstick pan) or until centers of madeleines spring back when lightly touched. Immediately remove from pans to wire racks, and cool completely.
Optional
- Once fully cooled, melt your white chocolate of choice according to the directions on the package, and dip each of your madeleines diagonally, setting them on wax paper to dry.
