It’s the time of year when we want to make all the fall recipes, y’all. Last week I shared a tasty recipe for Pumpkin Spice Cheesecake Dip, and this week I’m bringing in the sweet potatoes for a slightly spicy version of one of my favorite snacks. In my fridge, there are a few things you’ll almost always find. One of those things is multiple jars of pickles, and another is a couple of tubs of hummus.
My husband and I both tend to reach for hummus and vegetables or crackers when we need a filling snack, and we definitely love a good spice. When I made this hummus for us, I tossed in a little extra red pepper, so it was pretty spicy but it’s so easy to customize to your taste. Sweet potatoes with a little spicy seasoning are a go-to lunch for me, so a spicy sweet potato hummus is a great way to blend some of my favorite flavors for the perfect anytime snack (or healthy appetizer).
Spicy Sweet Potato Hummus
Ingredients
- 1 can Chickpeas
- 2 tbps Tahini
- 1 clove garlic
- Juice of 1/2 a Lemon
- Drizzle of Extra Virgin Olive Oil
- 1 small Roasted Sweet Potato with skin removed
- 1/2-1 tsp Red Pepper Flakes
- Coarse Ground Sea Salt
Instructions
- Add chickpeas, tahini, garlic, lemon juice, & olive oil to a blender and pulse until blended well.
- Cut sweet potato into chunks and add it to them the blender, along with red pepper flakes.
- Blend until smooth. If hummus is too thick, add a little water at a time until it is the consistency that you want.
- Transfer to a bowl or serving dish and top it with a little drizzle of olive oil and a sprinkle of sea salt.
