Who doesn’t love a sweet & salty snack? This summer trail mix is the a perfect snack to toss in your bag, just in case you need a fix while you’re at the office or out running errands. While most “summer” trail mixes would include some kind of dried fruit for a more tropical flavor, I just can’t handle dried fruit. The texture is all wrong, so for my Summer Trail Mix, I kept it lightly salted and added some unsweetened banana chips for a tasty mix. And here’s a tip: buy your raw almonds & walnuts in bulk and roast them yourself: it’s more cost-effective…and you can customize them to your own taste.

- Preheat the oven to 350. Toss the raw almonds and walnuts (in separate bowls) in a teaspoon of olive oil each and salt them to your liking. Roast the almonds on a baking sheet for 10-15 minutes, and the walnuts for 8-10 minutes, then let them cool completely.
