It’s officially the season of pumpkin spice, right? Fall is, as we all know, the best season of the year. The colors, the cooler weather, and all the yummy treats. While I’m not a big fan of the pumpkin spice latte (it’s way too sweet for me), I do love a good fall-flavored baked good.
Ok, you got me: it’s still really hot outside. But this past weekend I got out all of my pumpkin decorations and started burning my fall-scented candles. So I’m ready for all my pumpkin-spiced baking and adding a little pinch of cinnamon to my coffee grounds.
When it comes to baking, I’m always looking for a good, simple recipe. These three-ingredient pumpkin spice muffins are always a fall favorite in our house. I started making these back when I was in college, though back then I didn’t include the dark chocolate. (So if you’re not a chocolate lover, but you want to try this easy little recipe, just leave out the chocolate chips.)
And for all the other chocolate lovers out there: add in as many as you like. There’s no real set amount: I just added as many as I thought would taste good…then I dropped in a few more for good measure.
I know I’ll be whipping up a batch of these pumpkin spice muffins any time I have company this fall. They’ll be pretty perfect with a good cup of coffee, don’t you think?
Easy Dark Chocolate Pumpkin Spice Muffins
Ingredients
- 1 box Spice Cake Mix
- 1 can Pumpkin Puree
- 1/3 cup Dark Chocolate Chips
Instructions
- Preheat oven to 350. Line 12 muffin cups with cupcake liners OR spray with non-stick cooking spray.
- Mix together spice cake mix and pumpkin puree. Stir (or mix if using a stand mixer) until well blended.
- Fold in dark chocolate chips.
- Distribute evenly between the 12 muffin cups and top with a few extra chocolate chips (because you can always use a little more chocolate).
- Bake for 18-22 minutes, then transfer them onto a cooling rack. While the cool, make your self a cup of coffee...because these are GOOD with a cup of coffee.
