"Eggvocado" - Baked Avocado and Egg

This egg baked in avocado is a simple & easy breakfast that pairs perfectly with a simple piece of toast.

Ingredients
  

  • 1 Avocado
  • 2 Eggs
  • Goat Cheese
  • Sriracha
  • Salt & Pepper to taste

Instructions
 

  • Preheat the over to 375* F
  • Cut the avocado in half and remove the pit. Scoop 1-2 Tbsp of avocado from the center of each half, to make room for the eggs.
  • Spray a baking sheet with non-stick spray (I use olive oil). Optional: use two small pieces of tin foil to make a "nest" to keep the avocado halves stable.
  • Place the halved avocados on the cookie sheet, then crack one egg into each half of the avocado.
  • Sprinkle each egg with salt & pepper, then bake for 20 - 25 minutes, depending on how you like your egg to be cooked. (I like to keep mine a little runny in the middle...perfect for a soaking up with a slice of sourdough toast!)
  • When your eggs are cooked to your liking, drizzle with sriracha (or your favorite hot sauce), and sprinkle with as much goat cheese as you like. Personally, I like go a little heave-handed with the goat cheese.
  • Enjoy on its own, with a slice of your favorite toast, or even with a bagel if that's more your thing!

Notes

*Optional: after 15 minutes, cover the "eggvocados" with a foil tent to help the top of the eggs cook. (Make sure it doesn't rest on the egg, because they'll stick to the foil.) I usually just fold a piece of foil at the center and lightly place it over the eggs.
